The 163-year-old Kalkanoğlu pilaf maker in Trabzon offers the taste prepared in the Ottoman palace 4 generations ago to the tourists visiting the city.

 

Historical Kalkanoğlu Pilafcisi, operating in the Moloz location in Ortahisar district, attracts the attention of local and foreign tourists coming to the city.

 

Süleyman Ağa, nicknamed "Kalkanoğlu", was brought to the city center from Çarşıbaşı district because Osman Efendi, the Governor of Trabzon at the time, asked for a pilaf maker from the palace to meet the food needs of the soldiers gathered in the city to be sent to the fronts during the Ottoman-Russian War, also known as the "Crimean War", which started in 1853. .

 

Süleyman Ağa, who wanted the citizens to eat rice as well as the soldiers going to war, distributed rice and compote at the soup kitchen opened in Pazarkapı District.

 

During his visit to the soup kitchen, Governor Osman Efendi asked Süleyman Ağa to weigh the rice with a scale in order to ensure fairness in distribution. From that day on, rice began to be served by weighing it with a scale in Kalkanoğlu.
